Ingredients
- 4 ripe peaches, cut into wedges
- Juice and zest of 1 lemon
- 4 tbsp olive oil
- 1 tbsp honey
- Pinch of cayenne pepper
- Handful of fresh mint leaves, chopped
- 200 g arugula
- 1 ball fresh mozzarella, torn by hand
- 2 tbsp toasted sliced almonds
Method
- Grill 4 ripe peach wedges for about 2 minutes per side.
- Make a dressing with lemon juice and zest, olive oil, honey, cayenne and fresh mint.
- Arrange arugula, mozzarella and grilled peaches on a platter. Drizzle with dressing and sprinkle with toasted almonds.
