Grilled Peaches on the Plancha

Ingredients

  • 4 ripe peaches, cut into wedges
  • Juice and zest of 1 lemon
  • 4 tbsp olive oil
  • 1 tbsp honey
  • Pinch of cayenne pepper
  • Handful of fresh mint leaves, chopped
  • 200 g arugula
  • 1 ball fresh mozzarella, torn by hand
  • 2 tbsp toasted sliced almonds

Method

  • Grill 4 ripe peach wedges for about 2 minutes per side.
  • Make a dressing with lemon juice and zest, olive oil, honey, cayenne and fresh mint.
  • Arrange arugula, mozzarella and grilled peaches on a platter. Drizzle with dressing and sprinkle with toasted almonds.
